When turning the iPhone you can see the snapshot button rotate along side the phone, the accelerometer handles all of that.

plus, whether you would like better control on how your pictures turn out next try holding down the shutter button until you can size up your shot and you will see precisely how it will turn out. Once you like what you see, release the shutter button and your picture will be taken.
